I haven’t been in the kitchen this week at all. I spent 8 hours yesterday in the ER waiting room hoping to get some help with some excruciating pain in my shoulder and arm, turns out I have a pinched nerve in my neck (I’m blaming it on pot pie filling, the pans we make it in are about 60 pounds when full). Regardless, I see so many posts on Facebook lately where people are complaining that they can’t find good help for their businesses…I can say I have not had that problem. If you’ve been in this week you’ve definitely seen Sherri who has been working for me since late 2020. Sherri has been running the show this week keeping our items stocked in the refrigerator and basically keeping the kitchen open while I am at home on painkillers. I’m hoping to be back ASAP, but if you go in and see Sherri make sure you let her know what a great job she is doing! Thank you Sherri!

Tomorrow in the refrigerator we have some morning glory muffins (dairy free but still delicious), lots of blueberry streusel muffins, cinnamon rolls, cinnamon roll bread pudding, giant breakfast burritos and some French breakfast baguettes. There are also some taco boxes and chicken wraps as well as cream of chicken and rice soup. I’ll be making chicken salad in the morning and it should be ready around 8:30!

Today in the refrigerator we have a few containers of chicken soup with cheese tortellini, country grill chicken wraps, jalapeño popper chicken salad, Waldorf chicken salad, chicken pot pies (12 small amd 2 large), chicken devil soup, French breakfast baguettes, taco boxes, stuffed green peppers, key lime pies, mushroom banitsa, cashew cheese herb and veggie bagels, chicken and pretzel dumplings with mushroom gravy and green beans, buttermilk dill potato salad, red velvet banana pudding, and bell pepper amd chicken pasta. Working on cream of chicken and rice soup, morning glory muffins and blueberry streusel muffins which will all be ready by 3:30.

Three Years

So it’s been THREE YEARS this week since we opened the kitchen. Honestly in the very beginning, we didn’t know if it was going to last one year (and we’ve heard a few of you tell us the same) but here we are, now with two kitchens, more food businesses and customers from all over the place… Channahon, Minooka, Shorewood, Morris, Joliet, Plainfield, New Lenox…Manhattan!

I wanted to take a minute to say thank you to all of you who have come in regularly, who have come from far away, or who have followed along online for a long time and then finally decided to stop in. You guys are the ones that keep us going, and especially throughout the past year and a half. What a learning experience this has been! I’m glad you’re finding value in this place, and we all appreciate you!

Also just wanted to let everyone know we’re signing another lease here for two more years, so we’re not planning on going away any time soon. My plan is to grow, but I am still working on Craig with that idea

Today in the refrigerator we have 5 containers of chicken salad left, mushroom banitsa, gf zucchini muffins, cashew cheese herb and veggie bagels, southwest salad in a jar (4 left) two 9” and 22 6” chicken pot pies, chicken soup with cheese tortellini, red velvet banana pudding, Italian beef sandwich dinners, stuffed green peppers, meatballs and marinara sauce, bell pepper and chicken pasta, buttermilk dill potato salad, French breakfast baguettes, chocolate dream cakes, jalapeño popper chicken salad, country grill chicken wraps and taco box.

Beef brisket, smoked pulled pork shoulder, gluten free pizzas, baked ziti with Italian sausage, Mac and cheese, baked chicken parmigiana, baked beans, chicken and vegetable lasagna, birria ramen, chicken pesto pasta, chicken stir Fry with pineapple, bell pepper and peanuts, a few chicken and cheese enchiladas, Filipino chicken adobo, some cheesecakes and two chicken devil soups!

Working on chicken enchiladas that will be ready by 4:30.

Working on key lime pies that will be ready by 2pm and chicken tetrazzini will be ready by 4:30.
